Stir-Fried Udon Noodle with Shrimp (Banh Canh Udon Xao Tom)

A delicious Udon noodle that often served as a noodle soup in its simplest form. A very popular dish in Japanese cuisine  in and outside of Japan. However, when I had it as stir frying for the first time that was made by my oldest brother awhile back. I love it and so I thought I share this recipe to you all. The best part, its doesn't take that much time to make. Sometime I could spend hour and hour cooking and getting creative  in my kitchen, but when there are time I feel  lazy, not wanting to do much cooking  kind of day or just run out of idea what to make. This stir frying noodle dish or any kind of noodle stir frying  is the exactly kind of dish I go for. Very satisfying, great texture with only few ingredients needed. so lets get to it. :)
Ingredients :
21 oz ( 7oz x 3 bags) package
Buy any kind of Udon noodle you can find.  In the picture above is the one I normally use and they come 3 bags in a package along with their soup base (powder soup), you can keep for later use for any of your noodle soup dish or discard them.
Use as much as 8 – 16 oz  headless, peel and devein shrimp, season with pinch of salt and pepper
2 tbsp soy sauce 
1 tbsp oyster sauce
Salt and Pepper
1 bunch scallions (4-5 scallions) cut about an inch lengthwise 
½ medium sweet yellow onion , sliced
8oz baby bella or butter button mushroom , sliced
4 cloves garlic, finely chopped 
Cook the Udon noodle in a pot of boiling water for about 2 minute or just as it loosing up . Drain and set aside. Meanwhile prepare all your vegetable as directed in the ingredients section or cut however you prefer. Remember , just have fun at it.!
In another bowl, combine oyster sauce and soy sauce , mix well and set aside. 
Heat 1 tbsp cooking oil in a wok or nonstick stir fry pan over high heat. Add chopped garlic and saute' until it turn golden brown. add the shrimp and cook for about 30 second to a minute. Add a small amount of your oyster and sauce mixture, toss well.

Add sweet onion and let it sweat for a few second then add the rest of the vegetables except the green part of scallion, season it with a small pinch of salt and pepper , toss well and cook for 2 minute. Add another amount oyster and soy sauce mixture and toss well.
Add Udon noodle and toss well ( Notice: The Udon noodle are already fully cooked). Add in all the green part of the scallions, toss add the rest of the oyster and soy sauce mixture. Give another good toss to let all the sauce corporate into the noodle well for about 2-4 minutes. Remove from the heat. Serve while is hot. A delicious dish to get everyone to the dinning table ~~
